WHY IT’S CULTURAL SIGNIFICANCE IMPORTANT TO KAPAMPANGANS?

 

Pampanga, being the center of cuisine in the Philippines has a lot of dishes to offer. One of these dishes is the famous sisig. Sisig in Kapampangan language means ‘sour’. Sisig is an original kapampangan dish more than 2 centuries before the sizzling sisig version was accidentally invented by Lucia “Aling Lucing” Cunanan (Sisig Queen) from Angeles City. Based from Aling Lucing during her interview in Kapuso Mo, Jessica Soho, her invention of sisig was an accident. She burned a pig’s ear accidentally while grilling it and she did not want it to be a waste, so she chopped the pig’s ear and put other ingredients on it. Sisig is composed mainly of grilled pig’s ears or head, with a lot of calamondin (also known as calamansi), onions, hot peppers and soy sauce. It happened that people who eats in her carinderia loved it, thus the birth of the dish sisig.

 

Sisig became part of Kapampangan’s culture. It is not only famous in Pampanga or in the whole Philippines but in different parts of the world too. It is one of the dishes that us, Kapampangans, can proudly say it is our own. And we feel the strong urge to protect and preserve its original recipe. In fact, there is a city ordinance in Angeles City that safeguards the original recipe of sisig which stipulates the folowing:

“An ordinance declaring Sizzling Sisig Babi as an intangible cultural heritage of Angeles City, and establishing systems and policies in safeguarding the original recipe of Sizzling Sisig Babi, providing mechanisms of implementation, and for related purposes.”

 

Why is preserving sisig’s original recipe important to us Kapampangans? And what is the role it plays in our culture?

It is really important for us Kapampangans to preserve sisig as it is because sisig is part of who we are as a Kapampangan. This simple dish talks a lot about Pampanga, and also its cultures and traditions. These are all enveloped in this one simple dish. Letting others change or modify it will also mean we are letting these people modify and change our culture. If we don’t preserve and practice this important cultural heritage, it is not impossible that it will die too just like the others.

Sisig is a Kapampangan term which means “to snack on something sour”. It usually refers to fruits, often unripe or half-ripe, sometimes dipped in salt and vinegar. It also refers to a method of preparing fish and meat, especially pork, which is marinated in a sour liquid such as lemon juice or vinegar, then seasoned with salt, pepper and other spices.

Sisig also refers to Sizzling sisig, a Filipino dish made from parts of pig’s head and liver, usually seasoned with calamansi and chili peppers.

Sisig is one of the top favorite beer match and food to share in groups of friends on parties or just whenever but since sisig is such a rich dish it even goes well with rice. Yes, sisig is also delectable even with rice and as taken as a meal. No wonder the sisig rice meal has become a huge hit among food carts nowadays as you could see this food cart concept in almost any part of the metro especially in the busiest among the busiest spot.
